Parmesan Potato au Gratin - Baked in a muffin tin! (combine 2 minced garlic cloves, 2Tbsp minced onion or shallot, 2c half-n-half, 1/2c grated parmesan, 1/2tsp each s+p, 1Tbsp chopped fresh thyme. Thinly slice 2-3med. russet potatoes. Stack tightly 7-8slices in each of 6 greased muffin cups (no higher than the cup rim). Pour cream mix over taters; sprinkle with another 1/2c parmesan. Bake @ 400deg 45-50min til all liquid absorbed. Note: put pan under muffin tin to catch drips.)
