Caprese Chicken: Salt and pepper chicken. cook in 1 Tb olive oil. In separate pan, warm 1 Tb olive oil with garlic clove to give flavor and remove clove. In oil, sauté halved cherry tomatoes, 10 diced large fresh basil leaves, add to cooked chicken. Top chicken with 1/2 inch slices of fresh buffalo mozzarella, cover to melt cheese. Sprinkle with balsamic vinegar. Serve immediately.
