Avocado Pesto Egg Salad Bites. Serves 4. ½ avocado, cubed; 2 hard boiled eggs, cubed; 1-2 tablespoons pesto; handful fresh basil, slivered; 1-2 green onions, thinly sliced; 1-2 tspns lemon juice; salt/pepper to taste; ½ long cucumber, sliced into rounds. In a bowl combine all ingredients except the cucumber slices. Top each cucumber slice with a spoonful of the egg salad mix. Sprinkle with additional fresh basil.
