Here's my take on a festive pineapple vegetarian rice dish, making use of fresh vegetables along with day old rice. You can also add pieces of chicken, shrimp or beef if you'd like to make it a meat dish. However you'll be quite surprised by the wonderful flavors of this vegetarian dish. Fried rice is a popular dish in the Asian cuisine especially Chinese food.
